Fermented food witnessing a new surge in popularity nowadays, which is a great opportunity for manufacturers to deliver their products on a high demanded market. The method of fermentation, which is actually already used for thousands of years for example in baking bread or brewing beer, has been recently rediscovered by Asian and worldwide kitchen bosses. The concept of fermentation is especially famous in China since traditional Chinese medicine has always supported the health care of the digesting system, where healthy bacteria are inevitable for the human organism.  


According to industry insiders, the growing concerns about healthy nutrition is driving the demand for food fermentation worldwide. The mass food production has made many consumers be more aware of what they actually eat. Hence, they are looking for more variety and individuality in their food.  


Organic Acids

Some organic acids are produced by a fermentation process involving several microorganisms. Those acids are normally used in the food and beverages industry. Other areas of applications are catalysts, surfactants, and dyes.  


The end users for these acids can be found in the food and beverage industry, petrochemicals industry, pharmaceuticals industry, and textile industry. While the food and beverage industry is the largest downstream market and likely to remain such for the foreseeable future, the demand in the pharmaceuticals industry is growing faster than any other segment.

Pharmaceutical fermentation

Fermentation in the pharmaceutical industry is used, for example, in increasing the production of life-saving antibiotics like penicillin. Moreover, they play an important role in the production of several vitamins, cancer medication, vaccines, and other drugs.  


Biological fermentation method

Biological fermentation method is using different bacteria to ferment raw materials such as cob and wheat to produce succinic acid. However, the succinic acid always contains many by-products such as acetic acid, lactic acid, etc. so the final products have to be refined. In summary, the procedure of the biological fermentation method can be generalised into three steps. The first step is the fermented germs selection and construction, the second is the control of the fermented conditions in facilities, and the third is refining the fermented products.  


Nowadays, scientists mainly focus on fermented germs selection & construction as well as refining fermented products in order to make the biological fermentation method applied industrially. 


The major succinic acid producing germs are actinobacillus succinogens, mannhelima succiniciproducens, anaerobiospirillum succiniciproducens, and gene recombinant Escherichia coli (E.coli). Of those, the most important germ is actinobacillus succinogens which yield rate is the highest and it is used to produce succinic acid industrially. Besides the gene recombinant technology is relatively easy, so there are many kinds of research on it recently.   


About fermentation

The easiest way of fermentation happens, when vegetables are soaked in salt water or a similar juice to enhance bacteria growth. The increasing bacteria will then eat the sugar inside the plants, while secreting some form of acid, which causes the special taste for preserved vegetables. The fermentation industry is using this effect of bacteria to produce all kind of food, beverages, and even pharmaceuticals.
